RECIPE: Chicken & chorizo pie

I’d say a pie is more of a comfort food for me, but when I spotted a recipe for a chicken & chorizo pie on the cover a magazine (that I didn’t buy) I decided to give it a go. I love the combination of chicken & chorizo, and this pie seemed to go down well with my family!

1 sheet puff pastry (you could always make your own, but effort…)
4 chicken breasts
200g chorizo sausage
1/2 an onion
200g cream cheese
200ml chicken stock
1 egg
Salt & pepper to season

It’s quite easy to make as a lot of the work is just baking it. To start, preheat the oven to 200 degrees celsius and find a suitable pie dish – not too deep and not too wide. Dice the onion and set aside before cutting the chicken in to small chunks then slicing the chorizo sausage.
Heat a small amount of oil in a frying pan and cook the chicken until browned, add in the slices of chorizo for the last few minutes of cooking. Set the meat aside in a separate dish and then melt the butter in the original frying pan before adding the onions and cooking for a few minutes until soft. Add the cream cheese and chicken stock then mix thoroughly. Stir the meat in to the sauce and add salt & pepper to season. Once mixed, transfer the mixture in to your pie dish and cover with the sheet of puff pastry.
Before putting in the oven trim the edges of the pastry and tuck them in to the sides of the pie dish then brush with the whisked egg. Make a small hole somewhere in the pastry to allow any steam to escape and then cook for 25 – 30 minutes, until the pastry is puffy & browned.
