RECIPE: Baked Polenta Fries

INGREDIENTS:
Approx 500g polenta (you could buy some ready made like this or use the recipe here to make from a packet like I did, next time I’m definitely buying it ready made)
Mixed Herbs
Olive Oil
Grated Parmesan Cheese


Ever since I went to try out the lunch menu at Pizza Express I haven’t been able to stop thinking about their polenta fries. Sadly, between coursework and studying I’ve not had a chance to visit again to get some more so instead I thought I would try my hand at making some myself!

They’re actually super simple to make, even more so if you buy the polenta ready made which I would wholeheartedly recommend. The texture of the polenta I made from the packet wasn’t too great so next time I’ll be buying a packet from Tesco! Once you have a big chunk of polenta just slice it in to “fries” and lay out on a lined baking tray. Before putting them in the oven brush them with olive oil and add a sprinkling of mixed herbs & cheese (not essential but definitely make them a lot more flavourful). Bake them in the oven at around 200 degrees celsius for 30 – 40 minutes or until crispy looking and golden brown. You can enjoy them as they are, or a marinara sauce makes a great accompaniment!
