A wee while ago my mum was making this risotto (based on this recipe) for tea, so I soon decided that I would share it on here and then somehow ended up taking over the task of making it as soon as Emmerdale came on the telly.
2 chicken breasts – cut in to small chunks
Approx. 60g of onion – finely chopped
2 spring onions – also chopped
250g risotto rice
500ml hot chicken stock
1 sachet of Philadelphia “Simply Stir” garlic & herb sauce
It’s pretty easy to make really, to start out you slightly brown the chicken in a large pan with some olive oil. Once browned, remove it from the pan and set aside. Then melt the butter and sauté the onions & spring onions for a couple of minutes until soft. Add the rice and mix it well until it’s coated in the butter then pour in the stock a small bit at a time. In between adding bits of stock make sure you stir well until the stock is absorbed. Continue until all of the stock is used and the rice is cooked. You could add salt and pepper here to taste however we didn’t use any. Then, stir through the sachet of Philadelphia sauce and mix in the chicken. Leave to simmer for a little bit before serving and enjoying!
