Rocky Road is one of my favourite things to make – quite simply because it’s incredibly easy and tastes delicious. The recipe I use is based loosely on this recipe from Baking Mad but I’ve altered it slightly, it’s basically just doubled really!
You Will Need:
225g unsalted butter
500g chocolate – I used 400g milk and 100g plain, but you can mix it up based on your preferences
200g digestive biscuits – approx. half a standard packet
6tbsp golden syrup (or a generous squeeze!)
250g (approx) mini marshmallows
First off, break the chocolate in to small-ish pieces and melt in a large pan on a low heat with the butter and golden syrup.
Then, roughly crush the digestives in a bowl (I suggest using the end of a rolling pin) until they are mostly quite fine pieces with some bigger chunks for a bit of crunch.
Add the melted chocolate mixture to the bowl containing the biscuits and mix together, then add the mini marshmallows.
Turn the mixture in to a baking tray lined with greaseproof paper and smooth over with a knife or spoon. Stick it in the fridge then wait a mouthwatering two or three hours…
Turn out on to a plate and cut in to approximately sixteen rather generous slices, or as many as you prefer!
See – easy peasy. The perfect treat for a lazy Sunday.
