I first discovered Chompsky a few months back when I saw one of their pop-up dining events being shared on Facebook, and have been following their endeavours ever since. Much to my dismay, I'd always been busy with work when their events rolled around, but I did get a chance to taste some of their delicious handiwork when I paid a visit to Taste Buchanan - the new, revamped addition to the Buchanan Galleries food court - before college one afternoon. The first bite had me hooked, so when I heard that they were finally getting to open a food truck - Glasgow's very first proper street food truck - I was buzzing. Even more so when I discovered that I was off work the opening weekend, and could actually head along to check it out!

It may come as a surprise to some that this is the first "street food" truck of it's kind in Glasgow but, unfortunately, it's notoriously difficult to secure approval for street vendors in the city. There are numerous hoops to jump through, and so this means that Glasgow's street food scene doesn't really exist outside of our bricks & mortar restaurants. The scene is growing slowly, much to my delight, and I'm really hoping this continues in months to come.

Having tried out Chompsky's delicious take on Asian Bao Buns in their Taste Buchanan pitch, I was excited to try out more of their offerings from the truck itself. After a week of miserable weather we were greeted with a surprisingly sunny Saturday, so Paddy and I trotted off to the west end for a day of wandering Kelvingrove Park in the sunshine.

Chompsky's food truck menu is going to change on a regular basis, but at the moment you have a choice of a mouthwatering Reuben, flavorful Pho Ga - with both meat and vegan options - as well as a Black Lentil Daal, Jalapeno Poppers and fresh Papercup Coffee with some baked sweet treats to finish. I decided to have the Chicken Pho Ga and Paddy chose the Reuben. After grabbing our food we wandered over to a nearby bench to demolish our lunch and indulge in a spot of dog watching too.

Both meals did not disappoint, being packed full of flavour and cooked to perfection. The Pho Ga had the perfect balance of tender meat and juicy broth, with just the right amount of spice too. I'm not a huge fan of coriander, but it actually worked really well with this dish and was nowhere near as offensive to my taste buds as I usually find it! The Reuben was equally as fantastic, with flavoursome salt beef and creamy Emmental cheese making the perfect pair.

The van is located at the university side of Kelvin Way, a few minutes walk from Kelvingrove Museum and Art Gallery, or from the opposite direction just a short walk from Kelvinhall subway station. You can't miss it, so don't worry about having to hunt it down! As previously mentioned, Chompsky intends to switch the menu up on a regular basis, so be sure to follow them on social media to keep up with their antics - find them on Twitter, Facebook and Instagram.
