When the salted caramel craze first took hold I wasn't particularly fussed. Despite my love of combining sweet and savoury, salted caramel just had no appeal to me as I'm not a big fan of salt in itself. Give me cheese and pineapple, cheese and digestives, cheese and chocolate... cheese and anything really, and I'm happy, but salt and caramel? No thanks. Now, however, I've seen the error of my ways. It was one of my colleagues actually, who helped me realise just how good salted caramel can be after she brought in the most delicious chocolate and salted caramel cake.

Since then I've been partaking in a fair bit of salted caramel indulgence, and when I noticed a few recipes appearing for salted caramel brownies I knew I had to give them a try myself. This is a bit of a mix of recipes that I've found on Pinterest, and after a bit of trial and error, I think I've really perfected them. I might even go as far as to say these are the best thing I've ever baked...

Ingredients

200g dark chocolate
150g unsalted butter
200g caster sugar
50g soft brown sugar
3 eggs
75g chocolate chunks
100g plain flour
200g caramel sauce
1 teaspoon vanilla extract
Sea salt flakes

Method

Much to my waistline's dismay, these are so easy to make. To start, melt your butter and dark chocolate in a bowl over a pan of simmering water until it's all mixed in. Once it's fully melted, mix in your sugar, vanilla essence, chocolate chunks, eggs and flour until combined. Pour into a lined baking tin and smother it in the caramel sauce. Sprinkle a few flakes of salt on top before popping it in the oven to cook at 180c for roughly 30 minutes. Leave to cool in the tray for another half hour before cutting into pieces. They should be a little bit gooey, a bit sticky and VERY chocolatey. They make the perfect treat when you're cosying up with a cup of tea, but they're also a not-so-healthy breakfast if you so fancy. They're hard to resist, but if you can hold off they taste even better the next day after the caramel has had a chance to sink in even more!
