Ingredients
400g white chocolate
100g digestives
100g Cadbury's mini eggs
150g mini marshmallows

On one of my many visits to the food & drink section of Pinterest I stumbled across this delicious sounding recipe for Rocky Road with a bit of an Easter twist. It's pretty similar to my go to Rocky Road recipe with a couple of minor changes. I'm on a bit of a Rocky Road kick at the moment and I'm trying to test lots of new combinations, I kind of fancy some sort of Creme Egg concoction!

Basically, all you have to do is melt the chocolate in a bowl over a pan of boiling water and then crush some biscuits in to crumbs (with some larger chunks for a bit of crunch). After the chocolate has melted stir in the biscuit crumbs, the mini marshmallows and the mini eggs. Then fill a lined baking tin (I used clingfilm) and chill in the fridge for 2-3 hours until solid. I added a bit of a chocolate drizzle on the top for some decoration because I had some leftover icing from another baking project but that's not really necessary! To serve just slice it in to pieces and enjoy :)

I personally found this recipe a bit chewier than my usual Rocky Road (probably because of the marshmallow/biscuit ratio thingmy) but it was still really nice so if you'd prefer it a bit crunchier I'd opt for more biscuits and less marshmallows!
