Recipe: Garlic & Lemon Chicken Risotto


If you know me then you will know fine well that I love my food. I'm no Gordon Ramsay but I do love to cook and right now this easy peasy little dish is one of my favourite things to eat and comes in at around 450 calories (dependent on mayo use...)! I've never posted any recipes and I feel like I'm waffling a bit, but please let me know what you thought if you try it!

Ingredients:
100g grilled chicken breast
75g risotto rice (uncooked)
Approx. 500ml chicken stock
Lemon juice
Garlic mayonnaise (I used the lighter version)

Basically - I'm terrible at explaining things - I cooked the risotto according to the instructions with the chicken stock and added a little bit of lemon juice then once cooked and drained I mixed it with a little bit of garlic mayo. After grilling the chicken I cut it up in to little cubes and again smothered it in lemon juice (I love lemon) then mixed it in with the risotto and served with a little side salad and some yummy toast. With my salad I tend to go for garlic mayo (I think there's a trend arising here) or a little balsamic vinegar. I'm trying my best to eat healthily at the moment so this is one of my go to dishes as it's super easy to make and tastes delicious! Apologies for my terrible instructions, again, I just wanted to share one of my favourite meals!

P.S. My prelims are this week so I'm watching House studying a lot, but alongside exams comes study leave! So now that I'm starting to get back in to the swing of things with blogging this time off will definitely help.

Also, while I'm here I just want to make a little note. My last post about losing my gorgeous kitten was about something that was very personal to me and has resulted in a tough time for my whole family, however I've had to delete a lot of comments from that post from people who quite clearly hadn't even bothered to read it. If you 'love' a post about losing a family pet then you probably should get your head checked. It's offensive, insensitive and makes you look incredibly ignorant. Please don't comment purely for self promotion, it makes me less likely to check out your blog. I love knowing that people have read my posts, and I always check out the blogs of people who have quite clearly read before commenting. Ramble over!
